This special lot is all peaberries, whose unique round shape occurs when only one bean grows from a coffee blossom rather than the usual two. It is one of the many factors that make this cup pop with refreshing cranberry and bright raspberry notes. These lively berry notes work harmoniously with the cup's generous malic acidity, which is balanced with nice sweetness. Think ambrosia or honey crisp apple. The finish fuses caramel and heavier chocolate flavours, like a bite of a Skor bar.
Around 252 smallholders in the villages of Ululu, Idiwili, Mafumbo & Ilomba hold membership in the Umoja Ululu cooperative. Farmers in the area typically deliver their cherry in the afternoons and the coffee is depulped immediately and sorted using density channels. The seeds ferment for 24 to 48 hours and then are washed clean in deep tanks. The coffees finally soak for 8 to 12 hours before drying on tables for 8–14 days.
